Instructions:
1. Prepare the crust:
In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter and use a pastry cutter to mix until the mixture resembles coarse crumbs. Slowly add the ice water and mix until the dough comes together. Divide the dough into two equal parts, wrap in plastic wrap, and refrigerate for at least 30 minutes.
2. Prepare the filling:
In a separate bowl, mix the sliced apples, sugar, brown sugar, cinnamon, and nutmeg until well combined.
3. Assemble the pie:
Preheat the oven to 375°F. Roll out one of the chilled dough portions on a floured surface to fit a 9-inch pie dish. Place the crust in the dish and trim any excess dough. Fill the crust with the apple mixture. Roll out the second dough portion and place it over the filling. Trim any excess dough and crimp the edges to seal. Cut slits in the top crust to allow steam to escape.
4. Bake:
