For the pumpkin cake:
– 3/4 cup all-purpose flour

– 1/2 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon ground cinnamon
– 1/2 teaspoon ground cloves
– 1/4 teaspoon salt
– 3 large eggs
– 1 cup granulated sugar
– 2/3 cup canned pumpkin
Instructions:
1. Preheat oven to 375°F. Grease and line a 15 x 10-inch jelly-roll pan with parchment paper.
2. In a small bowl, combine flour, baking powder, baking soda, cinnamon, cloves, and salt.
3. In a large bowl, beat eggs and sugar until thick. Add in pumpkin and mix well.
4. Gradually add in the flour mixture and mix until well combined.
5. Spread batter evenly into the prepared pan and bake for 13-15 minutes or until the top springs back when touched.
6. While the cake is baking, lay a clean kitchen towel flat on the counter and sprinkle with powdered sugar.
7. When the cake is done, immediately invert onto the prepared towel. Carefully peel off the parchment paper. Roll up the cake and towel together starting from the narrow end. Let cool completely on a wire rack.
